This is my new love! I was missing mashed potatoes but not the way I felt after eating them. You can make this without the turnips but honestly they give you the feeling of eating a mash. Cauliflower by itself is lumpy and really not as creamy, plus turnips provide a nice sharp flavor!
Ingredients
- 1 head of cauliflower
- 2 large turnips
- 2-3 tablespoons butter or ghee
- sea salt to taste
- fresh ground pepper to taste
- fresh or dried parsley
Instructions
- Peel the turnips and cube like you would potatoes.
- Cut the florets off of the cauliflower.
- Add turnips and cauliflower in a large pot and cover with water.
- Cover with lid and cook on medium heat until you can stick a fork through both turnips and cauliflower.
- Drain.
- Using a potato masher, mash the cauliflower and turnips.
- Add butter, salt and pepper.
- Taste for more butter, salt and pepper.
- Sprinkle with parsley and serve!
