Turnip and Cauliflower Mash Up!

This is my new love! I was missing mashed potatoes but not the way I felt after eating them. You can make this without the turnips but honestly they give you the feeling of eating a mash. Cauliflower by itself is lumpy and really not as creamy, plus turnips provide a nice sharp flavor!

Ingredients

  • 1 head of cauliflower
  • 2 large turnips
  • 2-3 tablespoons butter or ghee
  • sea salt to taste
  • fresh ground pepper to taste
  • fresh or dried parsley

Instructions

  1. Peel the turnips and cube like you would potatoes.
  2. Cut the florets off of the cauliflower.
  3. Add turnips and cauliflower in a large pot and cover with water.
  4. Cover with lid and cook on medium heat until you can stick a fork through both turnips and cauliflower.
  5. Drain.
  6. Using a potato masher, mash the cauliflower and turnips.IMG_0265
  7. Add butter, salt and pepper.
  8. Taste for more butter, salt and pepper.
  9. Sprinkle with parsley and serve!IMG_0269
