Thai Summer Rolls are the perfect easy, healthy, and portable lunch option. Paired with a flavorful peanut sauce or sweet chili sauce, these rolls are both nutritious and delicious. Each bite offers a refreshing mix of textures and flavors, making them a delightful meal for any time of the day as well as an appetizer.
Ingredients
Rolls
- 8 rice paper wrappers
- Romain lettuce, cut about 2″ wide by 4″ long
- 1 medium cucumber, julienned
- 1 medium bell pepper, julienned
- 2 medium carrots, julienned
- 1 avocado, sliced
- Optional: Shrimp cooked to your liking
Peanut Sauce:
- 1/4 cup natural peanut butter
- 1/2 cup hoisin sauce
- 1 tablespoon rice vinegar or apple cider vinegar
- Water
Instructions
- Prepare the Peanut Sauce
- Using a whisk, mix the peanut butter, hoisin, and vinegar together with 3 tablespoons of water. Add more water for a thinner sauce.
- If you don’t want to make the sauce you can only try this one from Whole Foods.
- Prepare the Vegetables
- Slice the cucumber, bell pepper, carrots, and any additional vegetables into thin strips about 3 inches long.
- Slice the avocado into long pieces.
- Soften the Rice Paper
- Soak one rice paper wrapper at a time into a bowl of warm water for about 20-30 seconds.
- When the wrapper becomes soft and pliable, remove it from the water and place it on a damp towel.
- Pat it dry gently and dry your hands.
- Assemble the Rolls
- Arrange the lettuce and vegetables in the center of the wrapper horizontally. Add a few slices of avocado and, if using, shrimp. Fold the left and right sides of the wrapper towards the middle, then fold the top flap over the vegetables. Tuck everything in and tightly roll it up. This video helped me a lot!
- Serve:
- Cut the rolls in half and place them on a serving platter.
- Serve with peanut sauce and/or sweet chili sauce.
