This hearty breakfast casserole will keep you full for hours. It’s perfect for meal prepping and allows for variations of different meats, vegetables, herbs, and cheeses.

Ingredients

  • 8-10 eggs
  • 1/2 cup heavy whipping cream
  • 1/2 cup water
  • 1 lb bacon, chorizo, or pork sausage, cooked and crumbled or sliced
  • 1/2 red, green, yellow, or orange bell pepper, sliced (add a poblano pepper for extra kick)
  • 1 leek, white and light green parts only, halved lengthwise and sliced
  • 3-4 cups fresh spinach, roughly chopped
  • 2-3 cups shredded cheese (cheddar, mozzarella, or your favorite blend)
  • 2-3 tbsp butter
  • Salt to taste
  • Freshly ground black pepper to taste
  • Hot sauce (optional, such as Cholula)
  • Sour cream (optional, for serving)

Instructions

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C) and spray a baking dish with non-stick cooking spray.
  2. Cook Vegetables:
    • In a skillet over medium heat, melt the butter or ghee.
    • Add the sliced bell pepper and leek, and sauté until soft, about 5-7 minutes.
  3. Prepare Baking Dish:
    • While the vegetables are cooking, spread the chopped spinach evenly over the bottom of the prepared baking dish.
  4. Add Meat:
    • Spread the cooked meat (bacon, chorizo, or sausage) evenly over the spinach layer.
  5. Mix Eggs:
    • In a large bowl, beat the eggs.
    • Add the heavy whipping cream, water, half of the shredded cheese, salt, pepper, and hot sauce (if using).
    • Mix until well combined.
  6. Layer Vegetables:
    • Once the vegetables are softened, spread them over the meat layer in the baking dish.
  7. Add Egg Mixture:
    • Pour the egg mixture evenly over the layered vegetables and meat.
  8. Top with Cheese:
  9. Sprinkle the remaining shredded cheese over the top of the casserole.
  10. Bake:
    • Bake in the preheated oven for 30 minutes, or until the casserole is firm and a knife inserted in the center comes out clean.
    • Avoid over baking to prevent dry eggs and burned edges.
  11. Serve:
    • Let the casserole cool slightly before cutting into squares.
    • Serve with hot sauce and a dollop of sour cream, if desired.
  12. Store:
    • Store leftovers in a sealed container in the refrigerator.
    • Reheat in the microwave for a quick and satisfying breakfast throughout the week.
