Quick and Tasty Stuffed Jalapeño with Bacon and Cream Cheese

An easy and tasty treat that will take you less than 15 minutes to prepare.

Ingredients

  • 6 fresh jalapeños, cut lengthwise, seeds and membrane removed (WEAR GLOVES!)
  • 6 strips of cooked bacon, roughly chopped
  • 4 oz cream cheese, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Pinch of salt
  • Freshly ground black pepper, a couple of grinds
  • Vinyl gloves
  • Parchment paper
  • Optional toppings: shredded cheese, sour cream, fresh cilantro

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper.
  2. Prepare the Jalapeños:
    • While wearing vinyl gloves, cut the jalapeños lengthwise and remove the seeds and membranes.
  3. Make the Filling:
    • In a mixing bowl, combine the softened cream cheese, garlic powder, chili powder, salt, and freshly ground black pepper. Mix until well combined.
  4. Stuff the Jalapeños:
    • Spoon the cream cheese mixture into each jalapeño half, filling them generously.
  5. Top with Bacon:
    • Sprinkle the roughly chopped cooked bacon over the stuffed jalapeños.
  6. Bake:
    • Place the stuffed jalapeños on the prepared baking sheet.
    • Bake in the preheated oven for 15-20 minutes, until the jalapeños are roasted and the cheese filling is lightly browned.
  7. Cool and Serve:
    • Allow the stuffed jalapeños to cool for a few minutes before serving, as they will be very hot.
    • Optionally, top with a dollop of sour cream and sprinkle with fresh cilantro for added flavor.

Tips

  • Handling Jalapeños: Always wear gloves when handling jalapeños to avoid skin irritation from the capsaicin.
  • Bacon: For extra flavor, use smoked or peppered bacon.
  • Extra Toppings: Try adding shredded cheese on top before baking for an extra cheesy treat.
