This homemade meatloaf recipe is the ultimate comfort food. Plus, it can be easily made gluten-free for those with dietary restrictions. Perfect for a hearty dinner, this meatloaf is juicy, flavorful, and pairs wonderfully with my turnip/cauliflower mash or roasted potatoes recipe.
Ingredients
Meatloaf:
- 1 lb ground beef (can be substituted with ground chicken or turkey)
- 1 lb ground pork (same as above)
- 1 egg
- 1 small onion, finely chopped
- 1 cup regular or gluten-free bread crumbs
- 3 tablespoons Worcestershire sauce or liquid Aminos
- 1 tablespoon fresh parsley (or 1 teaspoon dried parsley)
- 1 tablespoon garlic powder
- 1 1/2 teaspoons sea salt
- 1/2 teaspoon freshly ground black pepper
Ketchup Mixture:
- 1/2 cup of your favorite ketchup or organic sugar-free ketchup
- 1 tablespoon honey (preferably raw and local)
- 1 teaspoon yellow mustard
Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C). Lightly spray a baking sheet with olive oil or line it with parchment paper.
- Prepare Meatloaf Mixture:
- In a large mixing bowl, combine the ground beef, ground pork, egg, chopped onion, bread crumbs, liquid Aminos or Worcestershire sauce, parsley, garlic powder, sea salt, and black pepper.
- Mix thoroughly using your hands (disposable gloves can be handy here) until all ingredients are well combined.
- Shape the Meatloaf:
- Transfer the meat mixture to the prepared baking sheet.
- Shape it into a loaf, roughly 8 inches long by 4 inches wide.
- Bake the Meatloaf:
- Place the baking sheet with the meatloaf into the preheated oven.
- Bake for 50-60 minutes, or until the internal temperature reaches 150-155°F (65-68°C).
- Prepare Ketchup Mixture:
- While the meatloaf is baking, prepare the ketchup mixture.
- In a small bowl, mix together the ketchup, honey, and mustard.
- Glaze the Meatloaf:
- Once the meatloaf reaches 150-155°F, remove it from the oven.
- Spread the ketchup mixture evenly over the top of the meatloaf.
- Return the meatloaf to the oven and continue baking until the internal temperature reaches 160°F (71°C), about 10-15 minutes more.
- Rest and Serve:
- Remove the meatloaf from the oven and let it rest for 5-7 minutes before slicing.
- Serve with your favorite sides, such as my turnip/cauliflower mash or roasted potatoes recipe.
