I had to share how incredibly easy this cake is to make. While it’s not homemade (made with Betty Crocker cake mix), it’s the closest you can get to the famous Portillo’s chocolate cake if you’re not near one. I made this for my mother-in-law’s birthday; she lives in Florida now and misses this cake dearly.
Ingredients
Cake
- 1 box Betty Crocker chocolate fudge cake mix
- 3 eggs
- 1 cup water
- 3/4 cup mayonnaise
Frosting
- 2 cans of Betty Crocker chocolate frosting
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare two 8-inch cake pans with oil spray and a dusting of flour.
- Mix all cake ingredients until smooth, about 4-5 minutes.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cakes completely.
- Frost with the chocolate frosting
