Ingredients

  • 1 pound ground chicken
  • 1 small white onion, chopped and split in half
  • 1 tablespoon olive oil
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 teaspoon smoked paprika (optional)
  • 2 cloves garlic, minced
  • 1 small bell pepper, finely chopped (optional)
  • Butter leaf lettuce
  • Optional: avocados, limes, cilantro, hot sauce, diced tomatoes, shredded cheese, sour cream, radishes, and any other taco fixings.

Instructions

  1. Prepare Ingredients
    • Wash and dry butter leaf lettuce leaves.
    • Chop the onion, mince garlic, and optionally chop bell pepper.
  2. Sauté Aromatics
    • Heat olive oil in a skillet over medium heat.
    • Sauté half of the chopped onion and minced garlic until translucent and fragrant, about 3-4 minutes.
    • If using, add the chopped bell pepper and cook until slightly softened, about 2 minutes.
  3. Cook Chicken
    • Add ground chicken to the skillet. Cook, breaking it up with a spoon, until no longer pink, about 7-8 minutes.
  4. Drain and Season
    • Drain most of the liquid from the chicken, leaving a small amount.
    • Stir in chili powder, garlic powder, cumin, smoked paprika (if using), salt, and pepper.
    • Cook for an additional 2-3 minutes, ensuring the chicken is well coated with the spices.
  5. Assemble Tacos
    • Prepare your lettuce leaves by washing and drying them thoroughly.
    • Spoon the seasoned chicken mixture onto each lettuce leaf.
  6. Garnish and Serve
    • Top with your favorite taco fixings: diced avocado, a squeeze of lime, fresh cilantro, hot sauce, diced tomatoes, shredded cheese, sour cream, and sliced radishes.
