This recipe is for a quick and easy batch of the MOST delicious Bread and Butter pickles you will ever taste. So easy and a great way to use up the cucumbers in your garden.
Fun fact: The Bread and Butter pickle got its name during the 1920’s Depression. People would trade these pickles for bread and butter.
Things You Will Need Ahead of Time
Canning jars and lids.
Ingredients
- 8 cucumbers
- 1 onion
- 3 tablespoons kosher salt
- 1 1/2 cups apple cider vinegar
- 1/2 cup white vinegar
- 1 cup light brown sugar
- 2 teaspoons celery seed
- 2 teaspoons mustard seed
Instructions
- Prepare the Cucumbers and Onion:
- Slice the cucumbers to your preference, about 1/4 inch thick.
- Thinly slice the onion.
- Salt the Cucumbers and Onion:
- In a large bowl, combine the sliced cucumbers and onion with the kosher salt. Use your hands to coat the cucumbers thoroughly.
- Cover the bowl with plastic wrap or foil and refrigerate for one hour. This will draw out the excess moisture from the cucumbers.
- Rinse and Drain:
- Rinse the salt off the cucumbers and onion, then drain well. This step removes the excess salt while keeping the cucumbers crispy.
- Make the Pickling Brine:
- In a saucepan, combine the apple cider vinegar, white vinegar, light brown sugar, celery seed, and mustard seed.
- Cook over medium heat until the brown sugar is completely dissolved.
- Pickle the Cucumbers and Onion:
- Pour the hot vinegar mixture over the rinsed cucumbers and onion in a large bowl. Use tongs to gently mix and ensure all the slices are well coated.
- Cover tightly with plastic wrap and refrigerate for 10-12 hours.
- Check and Stir:
- After the initial refrigeration period, stir the pickles from the bottom up using a large metal spoon to ensure even coverage. Refrigerate for an additional 1-2 hours.
- Store the Pickles:
- Use tongs to transfer the pickles into canning jars. Then, ladle the vinegar mixture over the pickles, ensuring that some mustard and celery seeds get into each jar.
- Seal the jars with lids and store them in the refrigerator. These pickles will stay fresh in the refrigerator for 2-3 months.
