I have been very interested in olive oil cakes for a while. Swapping olive oil in cakes and quick breads is a game changer! This cake is super easy, semi-homemade, extremely moist, and great to bring to any social event.
You can also add fresh basil or poppyseeds to the mixed batter.
Ingredients
- 1 box yellow cake mix
- Eggs (as per the cake mix instructions)
- Olive oil (replace the vegetable oil amount listed on the cake mix box with olive oil)
- Water (adjusted as per instructions)
- 2 lemons (zested and juiced)
- Optional: fresh basil or poppy seeds
- Bundt cake pan
Instructions
- Prepare the Lemons:
- Zest both lemons and set aside.
- Juice both lemons and set aside.
- Mix the Cake Batter:
- Follow the directions on the cake mix box. Replace the vegetable oil with the same amount of olive oil.
- For the water, use 1/2 of the lemon juice and add enough water to make up the total amount required by the cake mix recipe.
- Fold in 1/2 of the lemon zest and, if desired, add fresh basil or poppy seeds.
- Bake the Cake:
- Preheat your oven as per the cake mix instructions.
- Grease the bundt cake pan.
- Pour the batter into the prepared pan and bake according to the cake mix instructions.
- Cool the Cake:
- Once the cake is baked, remove it from the oven and let it cool in the pan for about 10 minutes.
- Use a fork to poke several holes in the bottom of the cake while it’s still in the pan.
- After the cake has cooled slightly, invert it onto a cooling rack or serving plate.
- Poke holes in the top of the cake as well.
- Prepare the Lemon Glaze:
- In a small mixing bowl, combine the remaining lemon juice and 3/4 cup powdered sugar.
- Whisk until the glaze is thick enough to stick to the cake but thin enough to seep into the holes.
- Glaze the Cake:
- Drizzle the glaze over the cake, making sure to fill the holes.
- Allow the glaze to set.
- Garnish and Serve:
- Finish the cake with a garnish of fresh berries, basil leaves, or whipped cream, if desired.
- Serve and enjoy!
