Homemade Sous Vide Egg Bites

These delicious egg bites are a fantastic way to start your day, reminiscent of the sous vide egg bites from Starbucks but even better. Moist, flavorful, and customizable, they make for an easy and tasty breakfast you can prepare in advance.

Things You Will Need Ahead of Time

Ingredients

  • 8 large eggs
  • 8-10 strips of cooked bacon, crumbled
  • 2 cups of cheese of your choice (cheddar, gouda, or mozzarella work well)
  • 1 cup cottage cheese (trust me on this)
  • 1/2 cup heavy cream
  • 1 cup mixed diced peppers of your choice (I chose red bell peppers and poblano peppers)
  • 1 cup chopped spinach (optional)
  • 1 tsp salt
  • 1/2 tsp coarse ground pepper
  • Fresh parsley, chopped (optional)
  • Cholula or your favorite hot sauce (optional)
  • Sour cream (optional)

Instructions

  1. Prepare the Instant Pot:
    • Add one cup of water to the Instant Pot and place the rack that comes with your pot inside. Set aside.
  2. Blend the Ingredients:
    • In a large bowl, combine the eggs, cottage cheese, 1 1/2 cups of the cheese, parsley, salt, and pepper. Add a dash of Cholula if you like a bit of heat.
    • Use a hand blender to blend until smooth, just until the cottage cheese is well incorporated and no large chunks remain.
  3. Prepare the Molds:
    • Lightly spray the silicone egg bites mold with cooking spray for easy removal.
    • Pour the egg mixture into the molds, filling each about three-quarters full.
    • Evenly distribute the crumbled bacon, diced peppers, and chopped spinach into each mold. Gently stir to combine.
  4. Cook the Egg Bites:
    • Place the filled molds on the rack in the Instant Pot.
    • Close the lid and set the Instant Pot to ‘Steam’ mode for 8 minutes.
    • Allow the pressure to naturally release for 4 minutes, then carefully perform a quick release to prevent the egg bites from overcooking.
  5. Cool and Serve:
    • Remove the molds from the Instant Pot and let them cool for a few minutes.
    • Gently pop the egg bites out of the molds.
  6. Storage:
    • These egg bites can be enjoyed immediately, stored in an airtight container in the refrigerator for up to a week, or frozen for up to a month. Reheat in the microwave before serving.
  7. Garnish and Enjoy:
    • Serve warm with a dollop of sour cream and a splash of hot sauce if desired.
