Ingredients
- 2 tablespoons olive oil, divided
- 1 onion, diced
- 3-5 hot or mild Italian sausages, casings removed
- 3 cloves garlic, minced
- 1 red pepper, chopped
- 1 green pepper, chopped
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 4 cups beef broth
- 2 teaspoons Italian seasoning (or a mix of fresh oregano and basil)
Instructions
- Prep the Vegetables:
- Dice the onion and chop the red and green peppers.
- Sauté the Vegetables:
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion, chopped peppers, and minced garlic. Season with a pinch of sea salt.
- Sauté until the vegetables are soft, about 5-7 minutes. Transfer the mixture to a small bowl and set aside.
- Brown the Sausage:
- In the same pot, heat the remaining 1 tablespoon of olive oil.
- Add the sausage, breaking it up into small pieces as it cooks.
- Cook until the sausage is browned and fully cooked through, about 8-10 minutes.
- Develop the Flavor:
- Return about 1/4 of the sautéed onion and pepper mixture to the pot with the sausage. This helps to flavor the broth.
- Add Broth and Seasonings:
- Add the beef broth, Italian seasoning, and additional salt and pepper to taste.
- Stir well to combine.
- Simmer the Soup:
- Bring the soup to a boil, then reduce the heat to low.
- Let the soup simmer uncovered for 45 minutes to 1 hour, stirring every 15 minutes to prevent sticking and to blend the flavors.
- Final Touch:
- Taste the soup and adjust the seasoning as needed, adding more salt and pepper if necessary.
- Add the remaining sautéed onion and pepper mixture to the pot.
- Cook for an additional 5-10 minutes to heat through.
- Serve:
- Ladle the soup into bowls and serve hot.
