Hearty Italian Sausage and Pepper Soup

Ingredients

  • 2 tablespoons olive oil, divided
  • 1 onion, diced
  • 3-5 hot or mild Italian sausages, casings removed
  • 3 cloves garlic, minced
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 4 cups beef broth
  • 2 teaspoons Italian seasoning (or a mix of fresh oregano and basil)

Instructions

  1. Prep the Vegetables:
    • Dice the onion and chop the red and green peppers.
  2. Sauté the Vegetables:
    • In a large pot, heat 1 tablespoon of olive oil over medium heat.
    • Add the diced onion, chopped peppers, and minced garlic. Season with a pinch of sea salt.
    • Sauté until the vegetables are soft, about 5-7 minutes. Transfer the mixture to a small bowl and set aside.
  3. Brown the Sausage:
    • In the same pot, heat the remaining 1 tablespoon of olive oil.
    • Add the sausage, breaking it up into small pieces as it cooks.
    • Cook until the sausage is browned and fully cooked through, about 8-10 minutes.
  4. Develop the Flavor:
    • Return about 1/4 of the sautéed onion and pepper mixture to the pot with the sausage. This helps to flavor the broth.
  5. Add Broth and Seasonings:
    • Add the beef broth, Italian seasoning, and additional salt and pepper to taste.
    • Stir well to combine.
  6. Simmer the Soup:
    • Bring the soup to a boil, then reduce the heat to low.
    • Let the soup simmer uncovered for 45 minutes to 1 hour, stirring every 15 minutes to prevent sticking and to blend the flavors.
  7. Final Touch:
    • Taste the soup and adjust the seasoning as needed, adding more salt and pepper if necessary.
    • Add the remaining sautéed onion and pepper mixture to the pot.
    • Cook for an additional 5-10 minutes to heat through.
  8. Serve:
    • Ladle the soup into bowls and serve hot.
