Enjoy a perfectly cooked, tender, and flavorful whole chicken with this simple Instant Pot recipe. Ideal for meal prep or a delicious dinner, this chicken is versatile and can be used in various dishes.
Ingredients
- 1 whole chicken (5-6 lbs)
- 1/2 onion, sliced in half (leave the end on)
- 2 tablespoons olive oil
- Salt (preferably pink, sea, or kosher)
- Coarse ground black pepper
- Fresh parsley (a few sprigs; dried is fine if you don’t have fresh)
- Fresh rosemary (a few sprigs; dried is fine if you don’t have fresh)
Instructions
- Prepare the Chicken:
- Wash the chicken thoroughly and pat it dry with paper towels.
- Rub the chicken all over with olive oil.
- Season and Add to Instant Pot:
- Place the rack inside the Instant Pot.
- Place the chicken on the rack.
- Season generously with salt and coarse ground black pepper.
- Add the sliced onion and fresh herbs around the chicken.
- Add half onion, sliced with the end on, to the top of chicken.
- Cook the Chicken:
- Close the lid and set the Instant Pot to “Pressure Cook” on high for 27 minutes.
- Once the cooking time is complete, allow the pressure to release naturally, or manually release it if you prefer.
- Rest and Serve:
- Carefully remove the chicken from the Instant Pot and place it in a baking dish to rest for about 10 minutes.
- Pull the chicken off the bone and use it for tacos, pulled BBQ chicken, fajitas, or simply enjoy it as is.
- Save the Broth:
- Don’t forget to save the broth left in the Instant Pot. You can also make bone broth with the remaining chicken bones.
